6 Minute Scrambled Eggs

This is a quick, low carb, microwave version of creamy scrambled eggs. Vegetarian unless you add bacon!

Prep time:

  • 2 mins prep
  • 3.5 min cook time
  • 5.5 min total

Ingredients:

  • 5 eggs
  • ~75 ml (1/3 cup) of cream
  • Teaspoon of butter
  • 1/4 teaspoon of salt

Instructions:

  • Crack eggs into microwave safe bowl
  • Add cream and salt and whisk until the yokes have dispersed into the liquid
  • Microwave on high for 2 mins, then stir
  • Microwave for 45 seconds, then stir
  • Microwave for 45 seconds, gently fold the mixture and then it should be a lumpy yet creamy consistency depending upon the power of your microwave. Having those 3 cooking intervals gives you a chance to check through the process
  • Serve and enjoy
