Cheesy Chopped Cauliflower

This is a quick and easy main or side dish. Vegetarian and low carb.

  • 10 grams net carbs

Prep & cook time:

  • 2 mins prep
  • 10 mins cooking time
  • 12 mins Total

Ingredients:

  • 400 grams of frozen cauliflower (or fresh)
  • 100 grams of shredded mozarella or ‘Costco Mexican blend’
  • Salt
  • Pepper or herbs

Instructions:

  • Place the cauliflower pieces into a microwave safe bowl
  • Cook on high for 10 mins
  • With the Cauliflower still in the bowl, use a bread knife to chop the cauliflower up into smaller pea sized pieces
  • Add the cheese, salt, pepper and herbs and firmly stir it through
  • This is ready to enjoy
