This is a versatile cheese and egg based bread style dough that you can use for pizza bases, biscuit, bread substitute etc.
Recipe
Carb count:
- 24 grams (net)
- Approx 4 grams per serve if used as a pizza base (1 slice, 4 grams carbs)
- 10 mins uncooked
- 15 mins cooking time
- Total 25 mins
Ingredients:
- 170 gram (1 & 3/4 cups)shredded mozzarella cheese
85 gram (3/4 cups)almond flour/meal
2 tbsp cream cheese
1 egg - 1/3 of tsp salt or less
- Parchment paper
- Note: you optionally can add some herbs or spices
Instructions:
- Preheat oven to 220c (420f)
- Mix shredded mozarella and almond flour/meal in a mixing bowl
- Add cream cheese to the mix
- Microwave on High for 1 min first, then stir and microwave for a further 30 sec for (1.5 min in total)
- Add egg and salt to the mix and mix it moderately
- At this point it is ready for cooking in your recipe. You need the parchment paper as it is sticky. For example the follow steps are for cooking a pizza dough with it:
- Place in between 2 pieces of parchment paper and apply pressure with you hand or a roller to flatten and shape it into a pizza dough shape, quite thin.
- Transfer to the flat sheet to the oven tray, remove top sheet of parchment paper
- Bake for 11 min at 220c (420f)
- Flip the base and cook for 4 mins longer
- The base is now ready for adding pizza topping ingredients (such as more cheese, pepperoni or precooked meats), then bake for a further 5 mins or until cheese is fully melted. Ready to enjoy!
